On Everyone’s Lips

The Ziller Valley is a legendary land of Milk and Honey. Everything pleasing to the palate is here including two new kitchen masters: Marcus Duchardt and Mario Herrmann. They recently joined our Heleni Restaurant team at DasPosthotel and celebrate every night in good taste.

There are 2,000–8,000 taste bud receptors on the human tongue. We are all genetically coded for a uniquely personal taste experience, and with the addition of two new masters in our kitchen, we are confident this dynamic duo can easily target and excite all of them. In short, Heleni Restaurant is climbing to new culinary heights.

From Bavaria with Love

New Head Chef Marcus Duchardt, formerly Sous-Chef at the Four Seasons Kempinski Restaurant Schwarzreiter – a Gault-Millau favorite with two toques – learned his craft at Hotel Schreiberhof. Following his passion, Duchardt cooked in France, Spain and Italy, exploring each region’s cuisine. The Munich native has a close relationship to Austria that is sure to deepen on a culinary level. We share similar values; Marcus is especially interested in our commitment to sustainability. He is thrilled that the food culture in Zillertal is anything but provincial and he looks forward to creating flavorful experiences that reflect each ingredient's quality and purity.

Unforgettable Flavors

Mario Hermann, the new Sous-Chef, made his mark at Hotel Hirschen in Schwarzenberg in the Bregenz Forest, where his honest and refined style earned them a Gault-Millau toque. After his education in Ratskeller Naumburg, he dazzled 4-and 5-star kitchens around Lake Constance and Switzerland. A passion for new challenges drew Hermann to Tyrol, where he is giving time-honored traditions a new twist, taking ‘regionality’ to the next level with heirloom vegetables from yesteryear. “Simple with an Aha-effect. That’s my style,” said Hermann who sources his organic ingredients locally – including the wild game from our private hunting reserve.

This new team is reinforcing Heleni’s reputation as a small but distinguished restaurant. This is another step forward in ascending the peak of culinary perfection. Those who enter this wonderland will wish they could linger longer in the Ziller Valley…

Heleni is located in DasPosthotel at ZillerSeasons and offers seating for 30. Regionality is the most important item on the menu: only that which is grown, harvested, milked or hunted locally deserves a place at the table. Organic, wholesome ingredients are turned into delectable masterpieces with international accents. The hotel business was in her blood from birth. Christina Binder-Egger was literally born in a hotel. In 2009, she inherited hotel operations from her parents. With courage, finesse and a sense of design, she and her husband Reinhard have created an alpine oasis respecting their Tyrolean traditions. And the circle closes yet again on a 3rd generation: their two children were born and are being raised in the hotel.
